And, do you know what that means? It means lovely late breakfasts with my family!

Aside from having eggs like we normally do on a weekend morning, I am planning on making these wonderful easy recipe for Irish soda bread muffins.

And I’m going to share it with you!

This is the recipe I normally use. This is not a traditional recipe per se. Indeed, it is my own version of it.

A Note on the ingredients:

  • Flour: it is best to use all purpose flour, as it will give nice soft texture to the muffins. You can use whole-wheat flour if you prefer, but better to avoid the very strong bread flour.
  • Baking soda: the addition of this raising agent is what gives the recipe its name of course. However, the combination of the baking soda and the baking powder will ensure a high raise and a softer texture to the muffins.
  • Yogurt: If find that adding yogurt to this recipe makes the muffins really nice and soft. You can use full fat milk if you want. In addition to that, sour cream makes a great alternative too.
  • Mix-ins: you can choose to add any ingredient you prefer, whether it is golden raisins, currants, chocolate chips, mixed seeds, dried fruit, mixed nuts, shredded cheese, spices, herbs, etc. Have fun experimenting with different flavours!

Ingredients 

  • 2 ¼ cups (280g) all-purpose flour (or white flour);
  • 2 teaspoons baking powder;
  • ¼ teaspoon baking soda;
  • ½ teaspoon salt;
  • ½ cup (100g) granulated sugar;
  • 1 large egg, at room temperature;
  • 1 cup of yogurt (245g), at room temperature;
  • 1 cup of raisins (or chocolate chips!);
  • 1 stick (113g) of unsalted butter, melted.

Instructions

Follow these instructions for the best Irish soda bread muffins!

  • Preheat the oven to 200° C (400° F). 
  • Line a muffin pan with paper liners.
  • In a large bowl, mix together the flour, baking powder, baking soda, salt, sugar, and raisins.
  • In a separate bowl, whisk together the wet ingredients: the egg, the yogurt and the melted butter.
  • Gently pour the wet mixture in the small bowl into the dry ingredients. With the help of a wooden spoon, stir well.
  • Bear in mind that the batter will be quite thick. Do not be tempted to over mix, as this will result in tough muffins.
  • Spoon the batter into the prepared muffin tin, making sure to fill the paper cups roughly to 3/4 full.
  • If you like, you can sprinkle some extra sugar on top of the unbaked muffins, but this is totally optional.
  • Bake for about 20 minutes, until a toothpick inserted into the center of a muffin comes out clean. Transfer the muffins to a wire rack to cool down. 
  • You can enjoy these irish soda bread muffins plain, or covered in butter and jam!

As I mentioned above, the great thing about this easy recipe for Irish soda muffins is that it is totally customisable.

Instead of using raisins, you could add whatever mix-in you prefer. For example, you could add chocolate chips, caraway seeds, dried cranberries, fresh blueberries, nuts…or a generous dollop of Nutella!

Alternatively, if you’d rather make them into a savoury muffin, skip the raisins, and add shredded cheddar cheese or mozzarella. For a super nice taste, add a sprinkle of  Fennel seeds, dried Rosemary or Thyme!

Can you make this recipe for irish soda bread muffins into a bread loaf?

You can certainly decide to bake this recipe into a loaf pan, instead of muffins.

Make sure to adjust the cooking time though. The load may be ready after about 40 minutes, but use a cake tester to be sure!

Can you make Irish soda bread muffins gluten free?

Yes, you can. I personally have never tried to substitute the all purpose flour fro a gluten free version, as nobody in my family is celiac or has a gluten intolerance. However, you can definitively use a gluten-free baking flour of your choice to make this recipe.

Can you make Irish soda bread muffins dairy free?

Like I said earlier, this recipe is really versatile and can also be made dairy free by using a dairy free yogurt and butter.

How do you store Irish soda bread muffins?

These muffins are best if consumed within a day of baking. However, you can store them at room temperature, in an airtight container, for up to 3 days.

For a longer storage, I’d recommend you freeze them on the day of baking. Make sure to place them in a freezer safe container first, to avoid freezer burns.

If you do decide to freeze the muffins, consume within 3 months.
