This morning, as I was readying my children to go to school, I noticed a definite change in the weather. The sun stood a little lower in the sky and the air was chilly. As we got ready to leave the house, we all grabbed our coats and headed outside to be faced by one of those sunny and crispy Autumn days.

On these glorious days, I crave warm breakfasts accompanied by a steaming hot cup of coffee.

I usually opt for an old-fashioned and nutritious bowl of creamy porridge, followed by a slice of toast smothered in kerrygold grass-fed butter and homemade jam.

That, in my books, is a super filling breakfast, that will keep you wide awake and ready to face whatever the world throws at you during the cold mornings when all you want to do is crawl back under the blankets!

From time to time, however, it’s nice to try new recipes. 

Even more so when you find a simple recipe that includes coconut milk and coconut flour!

IS PORRIDGE OK FOR LOW CARB DIET?

As I said, I love porridge, oatmeal and overnight oats for my morning meal.

However, they are not low-carb breakfast ideas.

Also, unless you source the ingredients in a specialised store, old fashioned rolled oats are not a gluten free breakfast.

WHAT’S A LOW CARB SUBSTITUTE FOR OATMEAL?

There are many options available to whip up a low carb oatmeal recipe. For example, you could use chia seeds or almond flour. Similarly, ground flaxseed (flaxseed flour) makes a wonderful flaxseed porridge!

CAN I SUBSTITUTE COCONUT FLOUR FOR OATMEAL?

Thankfully there are many coconut flour recipes available on the web. By and large, they are a great option if you are looking for a low carb porridge recipe, or if you are following the keto diet and are looking for keto breakfast ideas.

The creaminess of a coconut porridge is just unbelievable. It tastes so delicious, and only provides a fraction of the carbs!

What is coconut flour?

Coconut flour is a soft flour made from dried coconut meat. After squeezing out the milk from a coconut, the meat is then dried at a low temperature and lastly ground into a flour that is suitable for baking.

Coconut flour may help with supporting healthy cholesterol, and it also might provide anti-inflammatory benefits.

Is coconut flour high in fat?

Coconut flour comes from coconuts. Therefore it is naturally high in fats. On average, it has 14g of fats per 100g. This may vary depending on the brand you buy, so always check the labels.

However, it is important to realise that the fats contained in this flour are considered healthy fats, as they may have some health benefits. See above.

Is coconut flour gluten-free?

“Pure coconut flour is a gluten-free product. However, always check the label, especially if you are coeliac or have a gluten allergy. Some brands may contain added ingredients which contain gluten, or may be produced in a factory which handles gluten-containing products. If there is a risk of cross contamination, this should be clearly marked on the label.”.

Is coconut flour high in fibre?

Coconut flour is high in fiber. It can contain up to 45 grams of fiber per 100g. Therefore, just a tablespoon of coconut flour (which is approximately 10g) would provide you with over 10% of your recommended daily intake (30g of fiber a day for an adult).

An increased daily fiber intake might be linked to a lowered risk of heart disease, stroke and type 2 diabetes.

Does coconut flour contain protein?

Coconut flour is a reasonably high protein ingredient, with 18g per 100g. 

However, this flour only provides five of the eight essential amino acids needed in our diet. Therefore, it is considered an incomplete protein source.

THE BEST COCONUT FLOUR PORRIDGE RECIPE

Today I’m going to share with you my tried and tested coconut flour porridge recipe.

This warming and delicious low-carb breakfast is ready in under 5 minutes and will leave you satisfied and full till lunch time.

At the bottom of this post, you will find lots of toppings ideas, as well as substitution ones.

WHAT’S THE DIFFERENCE BETWEEN COCONUT FLOUR AND NORMAL FOUR?

Coconut flour is really different from plain, all-purpose flour. 

A little generally goes a long way, as it absorbs liquid very easily.

For this reason, packets of coconut flour always last a very long time!

While it is a versatile baking flour, it can be challenging to use, and you should rely on established recipes, especially if you’re new to baking with this alternative flour.

Coconut flour is particularly absorbent, and a very small amount of flour will absorb a very large amount of liquid. It also tends to have a drying effect on baked goods, because it is so absorbent. The best way to counteract its drying effect is to use plenty of eggs when you’re baking. The protein in egg whites helps to provide structure to baked goods while the yolks provide moisture.”.

VEGAN COCONUT FLOUR PORRIDGE

The version of the recipe I’m sharing is vegan friendly.

Coconut flour is vegan as it comes from coconuts.

The milk used in this recipe is plant based, but you can easily swap it for dairy milk if you prefer.

In addition to that, you can use a beaten egg in place of the ground flaxseeds.

Lastly, I like to use liquid stevia as a sweetener, but you can certainly use honey, pure maple syrup, coconut sugar, or plain sugar and brown sugar.


COCONUT FLOUR PORRIDGE RECIPE

(Makes 1 generous portion or 2 small ones)

Ingredients:

  • 1 cup of plant based milk of your choice (almond milk, soy milk, cashew milk, coconut milk);
  • 1/4 cup each of ground flaxseeds and coconut flour;
  • a pinch of Salt;
  • 1 Tsp each of vanilla extract and cinnamon;
  • sugar/sweetener to taste.

Toppings ideas:

  • Mixed berries (both fresh and frozen work well);
  • Mixed seeds (Pumpkin seeds, Sunflower seeds, etc.);
  • Chia Seeds;
  • Jam;
  • Goji Berries;
  • Coconut chips, coconut flakes;
  • Nut butters, such as peanut butter or almond butter.

METHOD:

Warm up the milk in a small saucepan on low to medium heat. Add the ground flaxseeds (or beaten egg if using), the coconut flour, the cinnamon and the salt. Mix well to avoid clumps forming. Add your preferred sweetener/sugar and the vanilla extract.
Bring the mixture to medium high heat, and keep stirring till it reaches the thickness you prefer.
Remove from the heat and pour the porridge into a bowl.  Lastly, top it with your favourite fruits, seeds or jam.

If you want to make a larger portion of this creamy keto porridge, just use a medium saucepan, and double up the ingredients.

how to make creamy oatmeal in microwave

The above recipe is made on a stove top. However, you can make creamy oatmeal using the microwave method.

To cook the coconut flour porridge in the microwave oven, combine all ingredients in a microwave-safe mixing bowl. Stir well and heat for about a minute. Stir the mixture again, and heat for further 30 seconds.

Let it sit for about a minute before consuming. 

Be very careful when using microwave ovens, as they heat foods in a non-homogenous way. Always stir the food thoroughly before consuming, to avoid “hot spots” in it.

Toppings ideas

I like to top my homemade coconut porridge with many different ingredients.

For example, you can choose between:

  • homemade mixed berries jam, or any jam; 
  • fresh berries;
  • sliced fruit such as peaches or bananas;
  • chia seeds;
  • seed and nuts;
  • nut butters;
  • coconut flakes;
  • whole flaxseeds;
  • Goji berries.

CAN YOU ADD ESSENTIAL OILS TO COCONUT FLOUR PORRIDGE?

I also like to add 1 drop of Doterra Essential Oils to my porridge, to enhance its flavor and health benefits.

For example, Oils that work very well in this recipe are: Clove, Cinnamon, Wild Orange and Lemon. 

Just add 1 drop of your favourite Doterra EO to the porridge once it’s cooked and stir well. Super Yum!
